Monday, Tasty Tuesday...

Sorry for my lack of posting yesterday. I did not even get a chance to sit down until after 11 last night. I was busy cleaning out our closet, packing up things for a garage sale, cleaning, making dinner, and cutting up some fresh fruit/veggies for snacking.. A woman's work is truly never done!  Now where were we? Oh yea!

Weekend Re-cap: As you know, we had my friend Vicky's wedding on Saturday. Oh my! She was one beautiful bride, and the wedding was so gorgeous. It was pure elegance, and she pulled it off perfectly!

Monday Food Diary:  For those of you that are my  close friends, you know that i have been trying to drop a few pounds lately with little to no progress. It isnt that I am too large, I am just too large for me, and over the past 5 years or so, I have steadily packed on a 35 lb. chub! Anyways, I have tried Paleo diet, Portion control, Weigh Watchers, Cutting out all Processed foods, Working out 6 days a week (sometimes 3 times a day).. Nothing. Maybe a pound. It was super frustrating. I finally went to the doctor yesterday and I am glad I did. She told me it is most likely due to the Birth Control Pills I have been taking. The extra hormones help your body build and maintain extra fat that is not needed. So after this month, I am quitting those things! woo hoo! Hopefully this will help to catapoult my goals into reality! (Just have to be prepared for potential consequences! yikes!)

Anyways, I have decided to do a photo food journal a few times a week to maybe help anyone who is struggling with similar issues, and to help myself stay on track and stay honest about eating . So let me know if there is anything else you want to know, or any questions about anything else. I will try to track my progress, and hopefully someone will be inspired! I would love any help/tips that anyone has to offer. I am always open to suggestions!


1 Light & Fit Vanilla Yogurt Cup, 3/4 cup frozen strawberries, 1/4 cup frozen mixed berries, Mango chunks and 1 TBSP ground flax seed


Mixed green salad with cucumbers, 1 sm. sliced beet, 1 pckt of tuna packed in water with a touch of Annie's organic roasted red pepper dressing, handfull of cherry tomatoes, mix of strawberries and blueberries

Snack: 1/4 cup honey nut cherios dry, I may or may not have eating most of the box of Annies organic cheddar bunny snacks (so yummy.. oops)


Grilled Asparagus, 1 Roma tomato with some garden seasoning blend, 1/2 chicken breast (marinated in McCormicks grill mates mexican fiesta ---- sooooo good)

A recipe I have to share. This recipe is from Skinnytaste.com ( I love her site/recipes. They are all delicious): Zucchini Turkey Burgers (We grilled!)

Turkey Burgers with ZucchiniGina's Weight Watcher RecipesServings: 5 • Size: 1 burger no bun Old Points: 3 pts (bun extra) Points+: 4 pts
Calories: 156 • Fat: 6.8 g Protein: 18.6 g Carb: 5.5 g Fiber: 1.3 g

Ingredients: 
  • 1.25 lbs 93% lean ground turkey
  • 1 small zucchini, grated 
  • 1/4 cup seasoned whole wheat breadcrumbs
  • 1 clove garlic, grated
  • 1 tbsp red onion, grated
  • salt and fresh pepper
  • oil spray 

Directions:
    In a large bowl, combine ground turkey, zucchini, breadcrumbs, garlic, onion, salt and pepper. Make 5 equal patties.

    Heat a large skillet on high heat. When hot, lightly spray oil. Add burgers to the pan and reduce the heat to low. Cook on one side until browned, then flip. Flip over a few times to prevent burning and to make sure the burgers are cooked all the way through.

    If grilling, clean grill well before cooking and spray with oil spray to prevent sticking
